Bitter Sweet Orange and Clove Mousse

Ingredients
· 1 tbsp Sugar
· 2 tbsp Butter
· ½ - ¾ tsp Cloves, powdered
· 1 Orange, zest
· 1 tbsp Gelatine
· 3 Oranges, juiced
· 1 cup Fresh cream
Method
- Soak gelatin in water.
- Melt sugar and butter in a small pan.
- Add in orange zest and juice, clove powder and bring to a boil.
- Filter this liquid mixture, add gelatin to it. Stir until dissolved and let it cool while stirring occasionally.
- Now whip cream until stiff and then once the above liquid is cooled mix it with whipped cream. Blend properly.
- Refrigerate for 3-4 hours.
- Garnish with orange zest and serve.
