Bitter Sweet Orange and Clove Mousse

Ingredients

· 1 tbsp Sugar

· 2 tbsp Butter

· ½ - ¾ tsp Cloves, powdered

· 1 Orange, zest

· 1 tbsp Gelatine

· 3 Oranges, juiced

· 1 cup Fresh cream


Method

  1. Soak gelatin in water.
  2. Melt sugar and butter in a small pan.
  3. Add in orange zest and juice, clove powder and bring to a boil.
  4. Filter this liquid mixture, add gelatin to it. Stir until dissolved and let it cool while stirring occasionally.
  5. Now whip cream until stiff and then once the above liquid is cooled mix it with whipped cream. Blend properly.
  6. Refrigerate for 3-4 hours.
  7. Garnish with orange zest and serve.
